One of the most common questions I get asked as a vegan baker is hands down “how do you bake without eggs?”. My answer is always the same: “Baking is science. If you replace the egg with something that causes the same reaction, it doesn't matter that there are no eggs in the recipe.” Finding that replacement then becomes the task at hand. And there are A TON of options out there. If you Google “egg replacements for vegan baking” you'll get all sorts of charts and lists and I would guess most of them are created by either: a) non-vegans who haven't actually tried them b) vegans who have forgotten what real cake and cookies are supposed to taste...
For as long as I can remember, I've loved Alice in Wonderland. It started with the Disney movie — the scene with the flowers was always my favorite — and then later on I read the book. The idea of escaping into a magical world is just too fun to pass on so I've always had an affinity for the story. And since turning things I like into desserts is kind of what I do, it was only a matter of time until Alice in Wonderland got the treat-ment (get it?). Ok, that was awful, but I couldn't resist it! Maybe you can take some of these ideas and make your own Alice in Wonderland themed tea party at home!...
Ok, this might seem weird but I'm just going to say it: watching people decorate cakes is super relaxing to me.
Am I the only one who thinks this? I can't be!
There's just something very soothing about watching someone go through the steps of making something ordinary really pretty.
To illustrate my point, here's an oddly satisfying moment of me decorating a cupcake. I dare you not to be strangely entranced by it!
Stay curious,
Natalia

It was 5:30 am on Sunday morning and I was in the bathroom, sitting on the floor crying. Not my brightest moment, I must admit, but I want to share it with you anyway because I think we can all learn something from it. What Happened That Sunday I was scheduled to have a pop up event at a local coffee shop. People had been preordering their treats all week and they were especially excited about the vegan donuts I had been advertising. It took me years to figure out how to make vegan donuts that tasted just like the real deal and I couldn’t wait to share them with my customers. I made donuts all week long as practice....
It's no secret that I'm a Harry Potter dork but what I'm an even bigger dork over is Disney. Main Street USA is my happy place. If I'm having a down day, you bet I'm watching some kind of Disney classic as a pick me up and if you see me singing along with a big stupid smile on my face while I drive, it's probably to some Disney tunes. Yep, that kind of level of dork. I just love it. So I couldn't help but get inspired by some of my favorite Disney movies and make some desserts. Snow White Anyone else getting major Snow White vibes here? Apples, witchy set up, dreamy flowers🍎🔮🌾 and the phillo crust in...
